Chocolates by George - Hot and Spicy Truffles
Shortly after starting to make truffles, I was approached by a close friend who asked if I had ever thought of making hot and spicy chocolate. It had never occurred to me, but then I began to have other people ask if I had some chocolate and chipotle combinations. Always willing to experiment, I began to have some fun. The first was a chocolate-chipotle with sea salt sprinkled on top. My friend’s daughter began to refer to them as the “Dragon Truffles” – not because they put your mouth on fire, she would explain to people who were thinking of buying some. “But after the rich chocolate flavor is gone, there is a lingering warmth in your mouth that you know something was there besides the chocolate.”
